My Fav.! Healthy, Easy, Chewy Bars
These are soooo good AND free of oil, sugar, gluten...
- 3/4 cup gluten-free rolled oats, ground into a flour
- 1 cup water
- 3/4 cup packed pitted dates
- 1/2 cup chia seeds
- 1/3 cup combo of raw sunflower seeds, raw pumpkin seeds
- 1/4 cup raw chopped walnuts or almonds
- 1/4 cup dried cranberries, finely chopped
- 1 drop cinnamon essential oil (1 tsp ground cinnamon)
- 1 teaspoon pure vanilla extract (sometimes i sub w/ 1 drop wild orange essential oil)
- 1/4 teaspoon fine grain sea salt
If your dates are slightly hard soak them in the water for 20 min before using. Preheat oven to 325F. Line your pan with parchment paper. Blend Oats at highest speed until it resembles the consistency of flour. Set aside in a large bowl. Blend the water and dates until smooth. Add all ingredients to the oat flour. Mix well. Scoop onto the pan and spread with a spatula as even as possible. Bake for 20-25min until firm to touch. Let it cool for 5 minutes. Transfer to a cooling rack and the cool longer. Cut into bar size pieces and ENJOY! I will usually double the recipe and put 1/2 in the freezer.
