Lasagna with a Twist
As a busy mom, “on the go”, I’m always searching for a quick, easy, nutrient packed dinner recipe that everyone loves and agrees with the whole family’s dietary needs - Paleo & Keto friendly.
My sister recommended checking out Hearts of Palm noodles as a great noodle substitute. I love making 1 pot meal and so “lasagna with a Twist” was born!
Lasagna with a Twist will fill you up and keep you full as this is a balanced “complete in 3 meal”. Complete in 3 means it includes protein, fats, and fibre (low glycemic carb) without worrying about the calories. When you include meals that are Complete in 3, it keeps your blood sugar balanced, keeps you full, and ensures you’re getting the incredible nutrient dense meal your body needs.

INGREDIENTS:

½ lb Organic grass fed Lean Ground Beef

½ lb Organic Ground Turkey

9oz - 1 Package Hearts of Palm Lasagna Noodles or These Noodles

½ lb Organic Whole Milk Ricotta Cheese

1 ½ cups of Chopped up Spinach

1 cup Marinara Sauce (my FAV is Simply Natural Organic) (or make your own)

8oz Low Moisture Full Fat Mozzarella Cheese

1 clove garlic - minced
-
salt and pepper to taste (1-2 tsp)
DIRECTIONS

Preheat the Oven to 375*F.

Warm up a Large Skillet on the stove over Medium-High Heat, and add the ground beef and ground turkey. Break the ground meat up and cook thoroughly.

Chop up spinach and add to a medium mixing bowl combine the Ricotta Cheese and garlic and salt & pepper (to taste), set aside.

Shred the Mozzarella Cheese and set aside for assembly.

Once the ground beef & turkey is cooked through, begin assembling the layers of your lasagna in your baking dish.
I always place a couple tablespoons of the marinara sauce on the bottom of the baking dish to prevent the noodles from sticking to it. Then assemble in any combination of layers that you choose. I always top the Lasagna with the last bit of Mozzarella Cheese so that it has a nice baked cheese topping.

Place the Lasagna in the oven at 375 F for 20-25 minutes. You will want the cheese to start bubbling before you take it out. This can take more or less time depending on your oven, altitude, or the brand of Mozzarella Cheese used.
DAIRY FREE OPTION
Instead of mozzarella and/or ricotta cheese use macadamia nut “cheese” ...sooo good (store bought OR make your own HERE.)
TIPS TO SUB AN INGREDIENT TO ALTER THE RECIPE
Kids can be picky, mine actually don’t like ricotta cheese or the cashew version. If I’m making 1 for the whole family, I’ll take it out and add in 2 tablespoons of Nutritional Yeast.
ADDITIONAL NOTES
I use a 9″x9″ casserole dish. You could double the recipe and use a larger casserole dish.. Storing for a few days and eating as leftovers tastes just as good and makes the next meal super easy!
Want a little “spice”, adding in chilli pepper flakes!
To keep things quick and easy, I cook up a giant pot ground beef and turkey ahead of time, portion it out and freeze it! That way, instead of adding extra time before making this meal, I just take it out of the freezer and warm up!
